Nothing is more annoying than trying to work in a kitchen with insufficient lighting. When
kitchens are well lit, they're the natural hub for socializing and homework, as well as for
meals. Old-fashioned lighting from low flat ceiling is simply less cheery and inviting.

Why do the vast majority of Florida kitchens have a seven foot

Because of the cost! From the early sixties through the
mid-nineties the standard kitchen cabinet only went as high as
seven feet from the floor to the top of the cabinet. As far as the
lighting went the builder framed out a box that recessed from
seven feet to eight feet and would install some fluorescent lights
and cover it with plastic and call it a kitchen light.

This easy solution caused problems though. A seven foot ceiling
can give you the feeling of walking through a cave. Also a low
ceiling brought the heat down - in the one room that the most
heat was generated. The lighting was not always good either, the
lights were either too small or their placement was incorrect.
