Carmels owners Melissa Lausch and Carole Bowers serve as General Manager and chef respectively. Together since the restaurants opening in October of 2001 they along with a professional staff have succeeded in making Carmels a notable dining destination.
Chef Carole enjoys utilizing a network of over twenty purveyors, allowing her to create menu items and specials with the freshest most flavorful ingredients available. Her philosophy is to let the ingredients speak for themselves, I dont like to mask the delicate flavors of the components with heavy sauces they are best supported with complimentary light emulsifications , vinaigrettes, stocks and broths. When available Chef Carole prefers to use naturally raised meats, organic produce and line-caught seafood.
Melissa, who also has a culinary arts background serves as the Restaurants General Manager. With customer service at the top of her priorities her philosophy is, If it is possible to do, and do it well, it will be done. She believes it is important to be flexible and allow Carmels guests to have choices. Many of Carmels guests dine there more than once a week, in order for them to feel at home special requests are always welcomed.
Carmels is recognized by numerous accolades, to date the only restaurant to receive Florida Todays highest rating. The Press Journal also recommends Carmels rating them with 4 Stars.
